
Cacciatore, in Italian means 'hunter's style'. This doesn't suggest that chickens were wild game, but that the recipe was adapted for use with our modern, domestic chicken.
Preparation Time: 20 minutes
Cooking Time: 45 minutes
Ingredients:
• 3 lbs chicken pieces
• 2 oz mushrooms, sliced
• 1 large onion, sliced
• 2 cloves garlic, minced
• 1 tablespoon oil
• 15 oz can tomatoes (undrained)
• 1 bay leaf
• ½ cup dry red wine
• Salt, pepper
Method:
Heat oil in skillet. Fry chicken pieces until golden brown. Remove from pan and drain. Sauté mushrooms, onion and garlic in skillet until soft. Return chicken to pan and add remaining ingredients. Cover and cook on medium low heat. Serves 4.
