
An interesting change from tuna sandwiches. Top with sprouts, tomato and lettuce. Add a few slices of avocado for a touch of elegance.
Preparation Time: 20 minutes
Cooking Time: 40 minutes
Ingredients:
• ½ cup cooked diced chicken
• ½ cup mayonnaise
• 2 tablespoons green onions minced
• 1 hard boiled egg
• 1 stalk celery, chopped
• Salt, pepper to taste
• 2 tablespoons grated carrot (optional)
• 8 slices of bread or 4 crusty rolls
Method:
Mix all ingredients in a small bowl. For a chunkier sandwich filling, mix with a fork. Smoother fillings can be mixed in a food processor for a few seconds. Spread between two slices of bread with preferred garnishes. Makes 4 sandwiches or rolls.
