Pineapple Chicken

Most people think that pineapples are native to Hawaii. This is understandable, but historically untrue. Although pineapples are now grown all over the world, they are originally from South America.

Preparation Time: 20 minutes

Cooking Time: 40 minutes

Ingredients:

• 3 lbs chicken pieces
• ½ cup flour
• 1 Tablespoon curry powder (to taste)
• Salt and pepper
• 2 tablespoons butter
• 1 table spoon olive oil
• ¼ inch ginger, grated
• 2 cloves garlic, crushed
• 2 cups crushed pineapple, undrained (if using fresh, add ¼ cup water or pineapple juice)
• 1 chicken bouillon cube dissolved in 1 cup water

Method:

Combine flour, curry powder salt and pepper. Toss chicken in this mixture and coat well. Heat oil and butter in pan and add ginger and garlic. Sauté for 1 minute. Add chicken pieces and cook until golden brown. Drain fat.
Add remaining ingredients, cover and simmer until chicken is tender. Serve with rice. Serves 4.
